Yields 10 people

To make the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Premix (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Method

Making the Cordial: Combine all the ingredients in a pot, bring to a gentle boil, agitating so the sugar melts. Next, take off the stove and leave to cool down entirely. Decant to a clean bottle, cap it and store in the fridge, it can be stored for about four weeks.

For the Batch Mix: Combine every spirits and syrup into a sizeable container, leave to sit for 60 minutes, then pass it through preferably using muslin, to ensure it's completely strained.

For serving: Pour 85ml of the premix into your stirring glass filled with ice, and agitate lightly for a minute to cool it down. Filter into an chilled martini glass or equivalent, decorate with some cranberries adding the final touch by giving it a brief mist with the mandarin essence over the top.
